2 medium cucumbers cut into 1/4's and then into 1cm cubes
4 tomatoes cut into 1/8's
15 kalamata olives cut in half
200 gms Main Ridge Dairy feta cheese cut into 1cm cubes
3 tbsps balsamic vinegar
5 tbsps olive oil
6 basil leaves cut into thin slivers
salt and freshly ground pepper
1. Cut all vegetables, olives and cheese into a large bowl.
2. Add vinegar, oil, salt, pepper and basil and stir.
3. Serve over lettuce or on its own.
