Cabbage 'Kalibos'

from A$5.25

Brassica oleracea

Heirloom ‘Kalibos’ is an elegant magenta coloured, conical shaped cabbage with exceptional sweetness. In addition to flavour and ability to hold in the field through winter, the striking hot pink veins that glow in winter make ‘Kalibos’ a stunning addition to kitchen gardens.

Seeded in mid July for November harvest OR January- early February for autumn and winter harvest, the glowing 1.2 - 1.5 kilo dense heads rise out of their lush purple, red foliage. The sweetness is enhanced by cold.

In our Southern Victorian fields, we selected heads not only for early maturity, density, shape, flavour and colour but also for those that shed the Winter weather, holding in the field extremely well. These cabbages store well in a cooler as well.

With a natural sweetness and crunch, we loved this old eastern European variety raw in slaws with our winter limes and coriander, braised in the oven on dark winter evenings with star anise and balsamic vinegar and made into sauerkraut with the heads remaining in the field in early Spring. This cabbage is as versatile as it is beautiful!

Our strain began with seed improved and stewarded by Fruition Seeds.
